🦖I want to have only 1 calendar across all my services, how do I do that?

Said differently, you want all your services to share the same availability.

To do so, when setting up all of your services, you'll need to setup them in the "availability per team member" mode as you can see in the screenshot below

After you've done this, click on the "team" tab then click on "edit availability".

Then click on "select services" and select all of your services. You'll be able to change the availability right below for all of your services at once.
